Processing method:
The process begins with 12-hours aerobic fermentation of the whole cherries. Then, a natural red fruit concentrate exclusively developed by the farmer added to the coffee.
The coffee then got an additional fermentation and absorption phase lasting two days, followed by a carefully controlled drying process that takes between 12 to 16 days.
