Infusion coffee beans are processed using non-traditional methods, such as fermentation with fruits, oils, or other ingredients, commonly known as Infused Coffee. This category includes various names such as Co-Fermentation processing, Infusion Processing, or what's known as infusion crops or infused coffee, and is sometimes classified as premium and limited coffee beans.

These innovative methods such as anaerobic processing and fruit processing are used to enhance or alter the natural flavors of specialty coffee beans, creating coffee with added flavors that differ from the traditional character. These crops are sometimes called infusion coffee or infused coffee, targeting those seeking a new taste for their coffee.
